[PCOS Food Friday] Fabulous Quick Waffles, Gluten, Grain & Dairy Free

Welcome to another Food Friday! Breakfast is one of the most important meals of the day. Why not make it super delicious with this recipe for fabulous waffles? This weeks PCOS – Friendly recipe is:  Robin’s Fabulous Quick Waffles, Gluten, Grain & Dairy Free

Robin’s Fabulous Quick Waffles
Gluten, Grain & Dairy Free

Ingredients

½ cup coconut or almond milk
1 tsp vanilla
1 tsp baking soda
3 eggs
1 cup raw cashews
3 tbls coconut flour
¼ tsp sea salt
1 cup blueberries
½ banana (optional)

*Always use organic and unsweetened ingredients whenever possible
Instructions

Place all ingredients in a blender and blend on medium speed until well blended. Pour into waffle iron and sprinkle in blueberries.
For syrup try this…Place ½ cube of pasture butter along with 1 cup of frozen berries into saucepan and heat until butter is melted. Add a few drops of stevia and sweeten to taste. Pour over waffles. Serve immediately.
Eggs are a very good source of high quality protein. Just make sure they are organic and from grass-fed chickens. Both the white and yolk of an egg are rich in nutrients – proteins, vitamins and minerals with the yolk also containing cholesterol, fat soluble vitamins and essential fatty acids. Lot’s of healing nutrients!

Coconut flour is an excellent substitute for processed flour. It is naturally gluten-free and rich in dietary fiber. It is full of “healthy fats” and packed with protein. Additionally, it is a great ingredient for those trying to decrease insulin resistance because it is high in fiber, but low in digestible carbohydrates. This lessens the spike in blood sugar levels that one may experience with processed flour. Add this nutrient rich recipe to your “Food as Medicine” arsenal.
