Welcome to another Food Friday! The days are becoming warmer. The sun is shining longer. Our bodies are beginning to crave fresh, cool, veggies. Why not prepare this yummy dressing for your next salad?
This weeks PCOS – Friendly recipe is: Robin’s Super Simple Salad Dressing.
Robin’s Super Simple Salad Dressing – Adapted from HollyHock Learning Center
1/2 cup nutritional yeast (must be nutritional yeast, other yeasts do not work!)
1/3 cup water
1/3 cup tamari wheat free or coconut aminos
1/3 cup raw apple cider vinegar
2 tbsp crushed garlic
1 cup extra virgin olive oil
2 tbls tahini (optional)
*Always use organic and unsweetened ingredients whenever possible
Throw everything in a blender and blend. Makes about 2 cups. Keep it in the refrigerator. It’s delicious on salads, meats and steamed veggies. Enjoy!
Raw apple cider vinegar may lower blood sugar levels. That is perfect for us as we aim to lower our insulin resistance and improve our insulin sensitivity. Also, a study out of Harvard revealed that women who consumed salad dressings with apple cider vinegar had a reduced risk of heart disease!
Tamari is like soy sauce, but isn’t nearly as high in sodium content and may also aid in the digestion of fruits and vegetables. It is rich in vitamin B3, protein, and manganese.
