[PCOS Food Friday] Bone Broth

Welcome to another Food Friday! It’s allergy season and those symptoms can put a damper on your day. So, sit down and enjoy a hot cup of bone broth to soothe that itchy throat and help your body to heal.

This weeks PCOS – Friendly recipe is: Bone Broth – A Super Food to Heal Our Bodies

Bone Broth

Ingredients

2 1/12 pounds assorted beef marrow bones (grass fed and finished)
3 stalks celery cut into big chunks
3 carrots, cut into big chunks
1 onion chopped
1 sweet potato cut into chunks
1-2 tbls apple cider vinegar
1 tbls sea salt
Your favorite herbs

Instructions

Put the beef bones into a crock pot and set the crock pot on low heat for 10 hours. Sauté celery, carrots and onions in a little water for a few minutes. Add to crock pot with sweet potato. Cover with water by about an inch. Add salt, herbs (I used rosemary, thyme, sage, oregano, tarragon 1 tbls or so of each) and vinegar. Strain when it’s done cooking and store in glass containers. Drink as a tea or add to soups.

Bone broth is such a super food when it comes to healing our bodies from just about anything. It is rich in minerals that support the immune system and contains healing compounds like collagen, glutamine, glycine, and proline. The collagen in bone broth will heal your gut lining and reduce inflammation. And inflammation exacerbates our PCOS symptoms.
Apple Cider Vinegar is also beneficial for dealing with PCOS because it helps control blood sugar and keeps your body from producing too much insulin. Less insulin means less testosterone. This recipe is another nutrient rich addition to your “Food as Medicine” arsenal!
