Create a Rainbow on Your Plate Part 4

For three days last week we reported on how creating a rainbow on your plate via the color of the fruits or vegetables in your healthy PCOS diet is a great guide to the goodness you’re receiving from different vitamins, minerals and phytonutrients. The colors featured were green, red and yellow/orange.
 
Our final color scheme is blue and purple, as in blueberries, grapes, eggplant and plums.

Blueberries are rich in antioxidants and other phytochemicals as well as vitamin K and a significant source of manganese, an essential trace mineral for all living things. Grapes have been positively linked to fighting cancer, heart disease, degenerative nerve disease and other ailments.
 
Eggplant is rich in potassium and calcium, while plums are high in carbohydrates and low in fat and calories. Plums are also an excellent source of vitamin A, calcium, magnesium, iron, potassium, Vitamin C and fiber, as well as being free of sodium and cholesterol.
